This recipe for apple pie with pastry cream, is the classic grandma’s apple pie, but it gets its name because grandma’s apple pie tastes very much like grandma’s apple pie and brings back those memories of when we were kids and spent afternoons as a family. Sometimes, on Sundays, we eat this delicious apple pie as a dessert or even as a snack with a beer to taste.

INGREDIENTS:

  • 3 eggs
  • 250 g ricotta cheese
  • 270 g flour
  • 15 g sugar
  • 1 sachet of baking powder
  • 40 ml oil
  • 3 apples
  • 150 g pudding
  • sugar

PREPARATION:

  1. First prepare the pudding (pudding mix: milk, egg yolks and sugar) and let it cool very well.
  2. Put the ricotta and sugar in a bowl and mix well, add the eggs and mix. Add the oil and mix again. You can do this with an electric mixer if you have one at home, or even try a little harder and do it with a hand mixer.
  3. Then we move on to the other ingredients: the flour and baking powder. We add them to the dough, mixing always from the bottom.
  4. Grease a mold and sprinkle it with flour. Ideally, a cake pan with large hinges and a diameter of 22 cm. Pour the batter of this rich and delicious apple tart into the mold and place the hand-cut apples and the pastry cream on top. And finally, add our second main ingredient, the pudding.
  5. Put the apple pie in the preheated oven at 180 degrees and bake for about 35 minutes.
  6. When you see that the cake is puffed and golden brown, remove it from the oven and let it cool to room temperature so you can easily remove it from the mold.
  7. Sprinkle the apple pie with plenty of sugar to taste, but just enough to take away the sweetness of the richness.

RECOMMENDATION:

Once the pie crust is in the pan, pour the sliced apples in first and then the cream. This trick will prevent the apples in the cream from falling to the bottom as the pie bakes.
