Ingredients:

  • 10 large mushrooms, cut in quarters
  • 5 cloves of garlic, chopped
  • 3 tablespoons of extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons dry sherry
  • 1/4 teaspoon Spanish paprika
  • Ground black pepper and sea salt for seasoning
  • 1/4 – 1/2 teaspoon dried chili flakes, optional for seasoning
  • 1 tablespoon fresh flat-leaf parsley, chopped

Directions:

  1. Cut the mushrooms into quarters, chop the parsley and crush the garlic.
  2. Over medium heat, add the olive oil and fry the mushrooms for a few minutes. Then add the rest of the ingredients EXCEPT the parsley. Fry for another 5 minutes. Then remove the pan from the heat, add the chopped parsley and stir. Serve hot with crusty bread.
