Ingredients:

  • 1 egg

  • 2 dozen puff pastry patties

  • 1 teaspoon of red bell pepper, chopped
  • 1 teaspoon cumin
  • 1/8 teaspoon ground red pepper
  • 1/2 cup tomato sauce
  • 1 cup black beans, drained
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 cup guacamole puree

Preparation:

  1. First preheat the oven to medium heat, in a small bowl beat the egg with a little water and set aside.
  2. Heat a frying pan, add the minced pork and fry until golden brown, add the onion, chopped bell pepper and garlic and cook until the onion is translucent, add the tomato sauce, cumin, red pepper and chili powder and simmer for 6 more minutes, then remove from the heat.
  3. Place the empanada tops on the clean work surface and start making the filling in even portions, brush the edges of the dough with a little water, fold in half and press each edge well with a fork.
  4. Prepare a greased baking tray, place the empanadas on the tray and brush each empanada with beaten egg.
  5. Bake for 15 minutes until golden brown. Meanwhile, prepare the beans, cilantro and cheese in a medium bowl and mix well. Prepare another bowl with the guacamole sauce.
  6. Remove the empandas from the oven, let them cool a little and serve them on a plate with the bean and cheese mixture and the guacamole. Enjoy this Mexican recipe.
