Samosas is the name given to a kind of dumpling in Indian cuisine. This type of cuisine has always had the bad reputation of abusing spices, that it is very spicy or that they do not always use quality products (hence the use of spices in abundance). Ingredients:

For the dough:

  • 225 g flour
  • 1 teaspoon salt
  • 3 tablespoons of olive oil
  • 90 ml hot water

For the filling:

  • Tomato
  • Bell pepper
  • Turnip
  • Green beans
  • Olive oil
  • Salt
  • Pepper

For the sauce:

  • 1 Greek yogurt
  • A few drops of oil
  • Salt and pepper
  • A pinch of curry powder

Preparation:

  1. We will begin by taking a bowl and sifting, with a sieve, the flour. Add the oil and the water, knead well until you get a loose and manageable dough. We will reserve covering the bowl with a cloth to prevent it from drying while we prepare the rest of the ingredients.
  2. We cut all the vegetables as fine as possible, if we have a mincer better. Fry and when the vegetables are poached add the tomato, also cut as finely as possible. It is essential that this filling is well done and with as little oil as possible.
  3. Take a ball of dough and roll it out with a rolling pin. Make a circle, cut it in half and fold the straight part in half, trying to get a cone shape. Fill with the vegetables and seal with a little water. Fry in abundant hot oil.
  4. Meanwhile we prepare the sauce with the yogurt, curry, salt and pepper. Serve the samosas with the sauce. The vegetables of the filling are to choose since the secret is in the dough and in the sauce. A dish to surprise.
