This chicken is delicious and worth trying. We cut it into small pieces and cook it with onion, garlic, celery, mushrooms and season it with bay leaf and white wine and other ingredients. Not to be missed.
Ingredients:
- 1 chicken
- Salt and pepper to taste
- 2 tablespoons butter
- 6 tablespoons olive oil
- 8 small onions (or green onion bulbs)
- 6 cloves garlic
- ½ cup white wine
- 2 vegetable stock cubes
- 2 bay leaves
- 1 stalk celery
- 200 grams of fresh mushrooms
- 6 tomatoes
- 150 grams of black olives
Preparation:
- Cut the chicken into prey, separate the wings, legs and thighs from the joints. Cut the breast lengthwise into two pieces, and divide each piece into two.
- Remove the skin and discard it. Wash the breasts, dry them and season them with salt and pepper to taste.
- Now fry them in 2 tablespoons of butter and 2 tablespoons of oil. After frying, add the whole onions and crushed garlic cloves to the pan (if you don’t have a juicer, take the unpeeled garlic and crush them with a wide knife, pressing well, then peel them). Add the dry white wine, the stock cubes, the bay leaves, the celery stalk and the mushrooms cut vertically. Stir well until a delicious sauce is obtained.
- Simmer until the chicken is tender, without the lid. Set aside. Cut the tomatoes into small squares and fry them in 4 tablespoons of hot olive oil. Add them to the previous preparation. Add the whole pitted olives to the pan. Heat the mixture very well, adjust the spices, remove the bay leaves and pour the mixture into a nice bowl.
- Sprinkle with chopped parsley to taste.
