Bonito encebollado is an extraordinarily delicious recipe that is usually accompanied by a good white wine. Ingredients

  • Slices of bonito
  • Onions for stewing
  • White wine
  • Freshly ground black pepper
  • Extra virgin olive oil
  • Sherry vinegar
  • Salt

Preparation

  1. To prepare this recipe you must first take a casserole and heat a little extra virgin olive oil in it.
  2. Once the olive oil has heated up, pour in the onions, which you have previously finely cut into rings.
  3. Add a pinch of salt and a little freshly ground black pepper.
  4. You can leave the onions to cook for about half an hour. Once the onions are lightly browned, pour a little wine or, failing that, a little vinegar and then lower the heat to cook.
  5. Then after a few minutes add to the casserole the tuna cut in slices and let it cook for another quarter of an hour approximately.
  6. Once you see that it is ready, let it rest for a few more minutes and then remove it from the pan and serve it on a plate.
