Ingredients:
- 10 large mushrooms, cut in quarters
- 5 cloves of garlic, chopped
- 3 tablespoons of extra virgin olive oil
- 1 tablespoon lemon juice
- 2 tablespoons dry sherry
- 1/4 teaspoon Spanish paprika
- Ground black pepper and sea salt for seasoning
- 1/4 – 1/2 teaspoon dried chili flakes, optional for seasoning
- 1 tablespoon fresh flat-leaf parsley, chopped
Directions:
- Cut the mushrooms into quarters, chop the parsley and crush the garlic.
- Over medium heat, add the olive oil and fry the mushrooms for a few minutes. Then add the rest of the ingredients EXCEPT the parsley. Fry for another 5 minutes. Then remove the pan from the heat, add the chopped parsley and stir. Serve hot with crusty bread.
