Ratatouille is a classic Spanish recipe, a humble dish prepared by the peasants of La Mancha with garden produce. It is prepared all over Spain with small regional variations, although today we will not leave you with the most famous and popular dish: the traditional Pisto Manchego.
INGREDIENTS:
- 2 onions
- 2 zucchinis
- 2 green peppers
- 1 red bell pepper
- 2 tomatoes
- olive oil
- 2 garlic cloves
- 1 bay leaf
- Salt
PREPARATION:
- To prepare this traditional ratatouille with manchego, first prepare the vegetables. Start with the onion. Peel and finely chop the onion.
- Wash the green and red peppers, remove the stems and seeds and cut them also in fine brunoise.
- Put a large saucepan on the stove with a drizzle of extra virgin olive oil and fry the onion and peppers over low heat.
- Add the whole, unpeeled garlic (with skin) and the bay leaf.
- Wash the zucchini, remove the ends and cut them into cubes or thin slices.
- When the onion and peppers have softened a little, after 5-7 minutes, add the zucchini and salt.
- After another 5 minutes, add the chopped tomatoes and let everything cook.
- When the vegetables are cooked, taste them and adjust the salt if necessary. Remember that the secret of a good traditional Pisto Manchego is to cook it unhurriedly over very low heat for about 40 minutes.
- Remove the garlic and bay leaf before serving.
PRESENTATION :
