If you like lamb, you can’t miss this recipe. The lamb chops are first marinated in a very tasty mixture, then cooked with the marinade liquid and finally served with a delicious shallot and mushroom sauce.
You can accompany this dish with a rich vegetable salad.
Ingredients:
- 12 lamb chops
- Salt and pepper to taste
- 1 sprig of fresh herbs
- 1 shallot
- 1 tablespoon sugar
- 1 tablespoon of oil
- 3 tablespoons white wine
- 100 ml vegetable stock
For the sauce
- 3 shallots
- 1 tablespoon of oil
- 2 tablespoons port wine
- 200 ml vegetable stock
- 200 grams of mushrooms
- salt and pepper to taste
- 1 tablespoon chopped parsley
Preparation:
- Start by cleaning the rib bones, scraping them with a knife to remove any adhering meat. Season with salt and pepper and place in a bowl. Mix the chopped fresh herbs with the shallot, a tablespoon of sugar, the oil, white wine and stock. Pour this mixture over the meat and marinate in the refrigerator for 2 hours.
- After this time, remove the dish, place the meat in an oven dish and add the marinating liquid. Bake at medium heat (180º) for 20-25 minutes. Set aside.
- For the sauce, chop the shallots and sweat them in the oil, add the port and reduce the heat. Add the chopped mushrooms. Cook for 1 minute, season with salt and pepper and add the chopped parsley.
- To serve, place the lamb chops in the salty sauce.
- You can accompany them with various vegetables, green beans, tomatoes and/or onions.
