If you like lamb, you can’t miss this recipe. The lamb chops are first marinated in a very tasty mixture, then cooked with the marinade liquid and finally served with a delicious shallot and mushroom sauce.
You can accompany this dish with a rich vegetable salad.

Ingredients:

  • 12 lamb chops
  • Salt and pepper to taste
  • 1 sprig of fresh herbs
  • 1 shallot
  • 1 tablespoon sugar
  • 1 tablespoon of oil
  • 3 tablespoons white wine
  • 100 ml vegetable stock

For the sauce

  • 3 shallots
  • 1 tablespoon of oil
  • 2 tablespoons port wine
  • 200 ml vegetable stock
  • 200 grams of mushrooms
  • salt and pepper to taste
  • 1 tablespoon chopped parsley

Preparation:

  1. Start by cleaning the rib bones, scraping them with a knife to remove any adhering meat. Season with salt and pepper and place in a bowl. Mix the chopped fresh herbs with the shallot, a tablespoon of sugar, the oil, white wine and stock. Pour this mixture over the meat and marinate in the refrigerator for 2 hours.
  2. After this time, remove the dish, place the meat in an oven dish and add the marinating liquid. Bake at medium heat (180º) for 20-25 minutes. Set aside.
  3. For the sauce, chop the shallots and sweat them in the oil, add the port and reduce the heat. Add the chopped mushrooms. Cook for 1 minute, season with salt and pepper and add the chopped parsley.
  4. To serve, place the lamb chops in the salty sauce.
  5. You can accompany them with various vegetables, green beans, tomatoes and/or onions.
