Ingredients:
- 2 large oblong potatoes
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 4 eggs

Preparation:
- We start with the typical boiling water procedure. Once it boils, we add the classic handful of salt, we boil the potatoes, previously washed. We make a stir-fry with garlic and peppers cut in julienne strips.
- Now we have to prepare the mashed potatoes. We cut the potatoes in half once cooked (to check it, we pierce them with a knife) and empty them with a spoon (always making sure that the skin remains potato-shaped). This means that we do not have to empty them completely.
- With what we extract from the potato we will make the mashed potato, mixing it with milk and a little black pepper. In the potato halves we will put the roasted vegetables and in the center we will put an egg.
- Cook at low temperature and wait until the egg is set. Serve with mashed potatoes as a garnish. There are several options, herbs can be used according to the cook’s taste. Combine with white wine. Spectacular result for children and adults.
