After cooking a good stew, there are usually some vegetables or meat left over. Normally in my house there is chicken, meat or some chorizo left over. What we can make with these leftovers are croquettes, and I can assure you that they are delicious. Also, as in every leftovers meal there is more than one thing left over, they will always be different because we can’t control the quantities exactly, unless we put some extra meat or chicken in the stew just for the croquettes. I hope you enjoy these croquettes and remember that we should never throw away leftovers because we can make delicious things like these croquettes.
Ingredients:
- 75 g butter
- 75 g flour
- 750 ml milk
- Nutmeg
- Flour
- Remains of stew (chicken, meat, sausage, blood sausage…)
- Egg
- bread crumbs
Preparation:
- First, melt the butter in a saucepan. Once melted, add the sifted flour.
- Continue adding the milk and simmer until it thickens and the broth loses the flavor of the flour. Season to taste with nutmeg, salt and pepper.
- Chop the leftovers of the stew. Add them to the béchamel sauce and mix very well.
- Put the béchamel sauce in a bowl that should be as large as possible so that it can be prepared more easily. Leave it in the refrigerator overnight with cling film over it.
- The next day, take the dough out of the fridge, shape the croquettes, dip them in the egg and then in the breadcrumbs. Fry them in hot oil and they are ready.
